Umami in Badalucco is led by chef Matteo D'Elia, who trained in Sanremo, Paris and England and worked alongside chefs such as Giorgio Locatelli and Taiji Maruyama. The Omakase menu evolves with the seasons and highlights garden vegetables, coastal catch and beef from local herds, using preservation, fermentation, marinades and varied cooking methods. Dishes favor produce from the Valle Argentina and the Ligurian Sea, with occasional influences from the subcontinent of America.
