Saur opened in 2017 in Barco, founded by three friends who trained at Da Caino: Nicholas and Alessandro lead the kitchen while Virginia manages the dining room; the founders come from Agrigento, Cremona and Turin. The restaurant offers modern Italian cooking with a focus on flavor, highlighting freshwater fish, garden vegetables, game and valley cheeses, working with small producers and a cellar that keeps evolving in a countryside setting.
