Ahimè in Bologna is an informal restaurant offering territory-focused cooking led by Executive Chef Lorenzo Vecchia, who joined as co‑creator in 2019. The menu is not divided into courses: dishes follow the kitchen’s flow with a vegetal focus, without fixed hierarchies among pasta, meat or other ingredients. Bread is treated as a standalone course, made from Emilian grains and a sourdough starter over ten years old; the wine list favors low‑intervention vignerons and sustainable practices.
