Novanta, opened in February 2023 and led by chef Simone Bottazzi, is housed in the old inn of the Castello di Argine in Bressana Bottarone. It offers Lombard cuisine focused on seasonality: vegetables and herbs from local growers, meats from short-supply local butchers, bread from ancient grains, Carnaroli Riserva rice, salt cod and fish from the Milan market, plus a selection of cheeses sold by the piece. Since 2025 it has been selected by the MICHELIN Guide and joined the Slow Food Chefs' Alliance in November 2024.
