In Caltignaga Cravero - Osteria Contemporanea is an osteria led by chef Gianpiero Cravero, who works with protection consortia to highlight local ingredients and DOP products such as Gorgonzola. The menu, rooted in classic Novara and Piedmont dishes, includes sea bass tartare with oyster and lemon cream, cod cannoli on a shellfish saffron velouté and Pachino tomato risottos filled with Gorgonzola. The chef, who has taken part in showcooking events, opened his first restaurant at 24.
