Scola, operating in Castelbianco since 1926, is a restaurant of creative cuisine led by chef Roberto Rummolo since 2022. The menu features items such as alpine char with parsnip cream and pine oil, an Uovo Crock with pumpkin cream and black truffle, rabbit cannellone alla ligure and dishes with smoked eel, anchovy sauce or bergamot butter. The venue includes a cellar of about 500 labels, a bar for aperitifs and seven rooms of the albergo diffuso.
