La Bucaccia in Cortona occupies the vaulted cellars of the 13th-century Palazzo Cattani. Chef Romano Magi leads a kitchen focused on traditional Tuscan dishes, with an emphasis on grilled meats — from Chianina IGP to cinta senese cured meats — local pecorino cheeses and homemade pasta such as bringoli with pecorino crust, chestnut ravioli and tagliolini with mushrooms. The intimate stone-and-beam dining rooms seat about 30 and include a small terrace overlooking the historic centre.
