La Cuccagna Giro di Vite in Crispiano began in 1969 as a butcher's shop with a cooking corner and is housed in historic 19th-century premises. Founded by Martino and Livia Marsella, it remains family-run: Gianni manages the dining room and the wine selection, while Rosanna prepares desserts. The kitchen, led by Paola Ortesta, serves seasonal Apulian dishes emphasizing meats and local ingredients; the cellar includes notable Burgundies, sparkling wines and bottles from small producers.
