Locanda La Raia in Gavi occupies a former coaching inn set within the 200-hectare biodynamic estate La Raia; it offers twelve individually furnished rooms and a spa. The restaurant, Stella Verde MICHELIN, is under the culinary direction of Tommaso Arrigoni with resident chef Mirko Natali and serves Piedmontese dishes that draw on the estate’s ancient cereals and flours, garden vegetables, herbs, eggs, organic honey and Fassona beef. The menu also includes two tasting options focused on the property’s wines and the local Borgo tradition, featuring products from small local suppliers such as Slow Food presidia cheeses and cured meats.
