Bolle in Lallio is led by chef Andrea Rota, raised on the shores of Lake Lecco, trained at the Hospitality Institute of San Pellegrino Terme and experienced at Piazza Duomo in Alba. Joining the brigade in 2022 and named Chef after a year, Rota emphasizes carefully sourced, seasonal Italian ingredients; front and back of house operate in close harmony in a room defined by large windows, raw materials and dramatic volumes.
