Forentum in Lavello is a restaurant set in a cellar grotto dating to the 1500s and housed in a historic residence on the town square. Led by chef Savino, the local-focused kitchen uses produce from the garden and centuries-old olive groves, Slow Food presidia and traditional dishes such as spaghettone lucano with sea urchin pulp. The wine list includes about 100 labels with attention to Aglianico del Vulture; the restaurant holds a Bib Gourmand MICHELIN.
