Shalai in Linguaglossa is the restaurant of the eponymous gourmet hotel, awarded one MICHELIN Star in 2015. Chef Giovanni Santoro leads a Sicilian, modern kitchen that alternates fish and meat dishes and includes vegetarian options; the team works with carefully selected ingredients—meats from native breeds, seasonal vegetables from small producers and fresh market fish prepared also raw following modern abatement standards.
