Kosmo Taste the Mountain, located in the heart of Livigno in a traditional alpine house, is one of two venues focused on mountain cooking. The kitchen follows natural cycles, sourcing high-altitude ingredients from mountain farmers and using natural preservation such as fermentation. Every part of ingredients is used — peels for chips, trout bones for concentrated broths and cores or seeds ground into powders — emphasizing waste minimization.
