Stube Hermitage, led by chef Giovanni Balice, is the restaurant of the Biohotel Hermitage in Madonna di Campiglio and received its MICHELIN star in 2008, the first MICHELIN recognition in the town. The kitchen focuses on creative dishes rooted in regional tradition and offers three tasting menus served in an original wood‑panelled Stube; the tasting menu is available only at dinner. At lunch the hotel's restaurant serves an à la carte menu with a small selection from the starred kitchen and the venue includes a Cigar Lounge overlooking the Dolomites with a curated rhum selection.
