Casamatta is the restaurant of Vinilia Wine Resort in Manduria, housed in an early-20th-century residence, and has held one MICHELIN Star since 2019. Led by chef Pietro Penna, the kitchen serves modern, creative dishes that highlight km‑0 produce from the castle garden and local ingredients such as vineyard snails, wild cardoon and bergamot.
