Led by chef Claudio Melis and developed with his wife Monica Wieser under the Esemdemì label, In Viaggio is a MICHELIN-starred restaurant located inside the historic Hotel Villa Irma in Merano. The kitchen focuses on creative dishes built on territorial and Italian ingredients treated with care; the chef presents freehand set menus in 5-, 7- or 9-course formats, featuring items such as coregone, cardoncelli, roasted potato broth and Salmerino from the Sarca river.
