Located in Norcia’s historic center inside Palazzo Seneca, Vespasia serves creative Umbrian cuisine and has held one MICHELIN star since 2016. The project is led by brothers Vincenzo and Federico Bianconi, sixth generation of a family in hospitality since 1850; the kitchen highlights ingredients from their Vallaccone farm and nearby producers in the Monti Sibillini, with local meats sourced from farms they visit regularly. The restaurant is a member of Relais & Chateaux and Ristoranti del Buon Ricordo.
