Le Trabe is the starred restaurant at Tenuta Capodifiume in Paestum, led by chef Marco Rispo. It focuses on Campanian cuisine with a modern approach, built on seasonal produce from an on-site biodynamic garden and a farmyard: three tasting menus (Caput Aquae — 4 courses; Intro By Nonna Lina; ZEROTTANTUNO — 8 courses, km 0). The cellar is housed in a tufo quarry with about 6,000 bottles and 900 labels; the venue sits along the Trabe river within a 90,000 m² estate and has held a MICHELIN star since 2013.
