La Trota in Rivodutri was founded in the 1960s at the Santa Susanna spring by Emilio and Rolanda Serva. The restaurant has remained family-run: in the 1980s Sandro and Maurizio developed a menu focused on freshwater species such as eel, trout, perch and carp, and today Amedeo and Michele lead the kitchen and the dining room. The restaurant holds one MICHELIN star.
