Il Colmetto is a farm with a restaurant and on-site dairy in Rodengo Saiano, selected by the MICHELIN Guide. Operating since 2016 on thirty hectares, it keeps over 150 Saanen goats and turns their milk into fresh and aged goat cheeses, yogurts and puddings; the estate also grows fruits and vegetables in greenhouses and gardens and raises Romagnoli donkeys semi-wild. Led by chef Riccardo Scalvinoni, the kitchen serves a weekly seasonal menu built largely on self-produced ingredients and on using each element fully to reduce waste.
