Nomos Ante in Rome, located within the Nomos Hotel but operating independently, presents dishes that weave Roman roots with techniques gathered during international travels. The kitchen is led by chef Zoli, born in Rome in 1990, trained in the United Kingdom, Spain, Brazil, Japan, China and France, and having worked alongside Alex Atala, Alexandre Gauthier, Yannick Alléno and Seiji Yamamoto, with a period as sous chef at Il Pagliaccio.
