Cavallini in San Severino Marche is led in the kitchen by chef Luca Cavallini, with his brother Simone overseeing the dining room; the restaurant has been listed in the MICHELIN guide since 2016. The menu focuses on fish, seafood and Marchigiana dishes, based on selected ingredients; examples on the list include spaghetto freddo with marinated scampi, cuore di baccalà, a filo pastry roll with red prawns, carpaccio of amberjack and rum babà. The dining room was refurbished in 2019 to increase comfort while preserving a relaxed, welcoming atmosphere.
