Spinechile in Schio is led by chef Corrado Fasolato and occupies a house perched on a mountainside edge, set among pebbles and woods, with rooms including a stable, a barn and a large window overlooking a valley toward the sea. The modern creative kitchen relies on produce from the on-site farm "Le Pacche", works with both seafood and meat and preserves classics such as the moka extract, cuttlefish fettuccine alla carbonara and venison steamed with woodland herbs; the wine cellar holds about a thousand labels.
