Don Camillo in Siracusa is a restaurant selected by the MICHELIN Guide where chef Giovanni Guarneri has led the kitchen since 1985. Dishes are built on local ingredients and external influences: examples include oysters paired with gin and Maldon salt on oyster mayonnaise, red prawn tartare with clams and tomato foam, and a cube of cuttlefish in black sauce over saffron cream. The dining room, set beneath Catalan vaults, serves the same menu to the entire table (children excluded).
