Via Dietro le Mura B 16, 38122 · Trento
Augurio, opened in 2020 in central Trento, blends stone walls and larch furnishings with a modern cuisine rooted in local products. The open kitchen works with seasonal ingredients and an intelligent micro greenhouse to produce fresh sprouts and herbs; the cellar includes a dedicated wine room with a curated bottle selection and wine pairings. The menu features dishes such as Risotto all’estratto di spinaci con ricotta di Malga Brigolina e Yuzu candito, Ricciola “Seriola” with eggplant and Pluma Iberica.
