Aquadulcis in Vallo della Lucania is housed in an old water-powered olive mill and presents territory-based cuisine with a modern approach. Chef Luigi Coppola oversees three tasting menus — Da Paestum al Cilento, Materia Prima and Fronda — that highlight Cilento ingredients, including olive oil and wines produced on the estate, and combine land and sea. The dining room is intimate, with only seven tables, and service follows the sequence of the menu.
