Domaine Alain Michelot Nuits-Saint-Georges Premier Cru Les Cailles is a red wine from the Côte de Nuits. It belongs to the range of the Nuits-Saint-Georges family, which also cultivates vineyards in Morey-Saint-Denis and Clos de Vougeot. Winemaking proceeds slowly, with largely destemmed grapes and an extended maceration. After pressing, the wine is transferred with its fine lees into oak barrels. The cool cellars favour gradual development, while new wood is used in a restrained proportion to accompany the wine’s structure without dominating it during its maturation in the cellar.
