Description

Outside comes from Alessandro Salvano’s Drink Wines Not Labels project in Montelupo Albese, just beyond the Barolo appellation boundary. Nebbiolo from this borderland is interpreted through extended maturation inspired by the area’s major red wines. Fermentation uses indigenous yeasts, while the project follows organic principles and limits sulphite additions. The name reflects a deliberate aim: to demonstrate a vineyard’s worth through its wine, even outside a famous denomination. A lengthy ageing period, including time in wood, completes a production approach centred on the origin and identity of the grape rather than the prestige of an appellation.
