Description

The Guyon family's Bourgogne Chardonnay comes from Meuilley, close to Nuits-Saint-Georges. The vines occupy a steep, well-exposed hillside on clay-limestone soils. Hand harvesting into small crates is followed by grape selection at the winery. The juice ferments at low temperature in barrels, with lees stirring, and maturation continues in oak. The aromatic profile suggests flowers and almonds, while the palate is fresh and fine. Warm fish starters are suggested accompaniments, with a serving temperature of around thirteen degrees for this regional white from the family's vineyards.
