Description
Antonin Guyon's Bourgogne Pinot Noir brings together grapes from three Côte de Beaune villages: Pernand-Vergelesses, Savigny-lès-Beaune and Aloxe-Corton. The vineyards grow on clay-limestone soils. Grapes are harvested by hand into small crates, with bunch selection at the winery. Fermentation takes place in wooden vats with cap punching and temperature control, while maturation continues in oak barrels. The wine shows a ruby colour and small-berry aromas, with an emphasis on finesse. Red meats, roasts and mild cheeses are suggested accompaniments for this regional Burgundy, whose origins span several of the estate's village locations.
