Description
Clos du Village is Antonin Guyon's monopole in Chambolle-Musigny, in the centre of the Côte de Nuits. Pinot Noir grows on limestone soils derived from Jurassic scree, with an east-southeast aspect. The grapes are hand-harvested into small crates and sorted at the winery. Vinification in wooden vats includes cap punching and temperature control, followed by maturation in oak. The bouquet suggests small berries and violet, with a silky texture and a fine, balanced character. Tenderloin and guinea fowl in salmis are suggested accompaniments for this red from the clos.
