Description

Les Cras expresses the Pinot Noir of Chambolle-Musigny, in the heart of the Côte de Nuits. The vineyards face east-southeast and have clay-limestone soils associated with Jurassic scree. Antonin Guyon harvests the grapes by hand and sorts them at the winery. Processing in wooden vats includes a cold soak before fermentation and a subsequent period of maceration. The wine then matures in oak barrels. Its ruby colour is accompanied by delicate small-berry and violet aromas and a silky texture. Tenderloin and guinea fowl are suggested pairings that suit its fine character.
