Description
Les Champs Longs is Antonin Guyon's Chorey-lès-Beaune, made from Pinot Noir north of Beaune, opposite Aloxe-Corton. The vines grow on clay-limestone soils. After hand harvesting into small crates, the grapes are sorted at the winery and vinified in wooden vats, with cap punching and controlled temperatures. Ageing continues in oak barrels. A ruby colour introduces sour-cherry and raspberry aromas, while the palate emphasises harmony and a velvety texture. Grilled or roast meats are suggested accompaniments, with a serving temperature of around seventeen degrees for this village wine.
