Description
Antonin Guyon's Corton-Charlemagne comes mainly from south-facing parcels at Aloxe-Corton, on white-marl soils. Chardonnay is harvested by hand into small crates and sorted at the winery. Fermentation takes place at low temperature in barrels, with lees stirring, and maturation continues in oak. A gold colour with green reflections accompanies aromas of lime blossom, acacia and honey. The palate has a mineral character, complexity and persistence. This Grand Cru can be paired with shellfish such as lobster, or with poultry served in a cream sauce, following the estate's suggested matches.
