Description
La Justice is Antonin Guyon's Gevrey-Chambertin from the Côte de Nuits. It is made from Pinot Noir grown on clay-limestone soils. The grapes are harvested by hand into small crates and sorted at the winery before vinification in wooden vats, with cap punching and temperature control. Maturation continues in oak barrels. A garnet colour and sour-cherry aromas lead into a rounded, balanced palate, with an oak nuance accompanying the tannins. Roast leg of lamb, coq au vin, game and a range of cheeses are suggested food matches for this village wine.
