Arnaud Lambert's Clos de Midi is a Saumur Blanc made from Chenin grown in Brézé on chalk with silt, sand and clay. Vinification takes place in tank, keeping the relationship between grape and origin central. The vineyard belongs to the Lambert family's journey, begun by Yves in 1996 and continued with Arnaud from 2005. Work on the Brézé clos began in 2009, alongside the adoption of organic practices. Served between twelve and fourteen degrees, it accompanies fish with butter sauce, red mullet with fennel and goat cheeses.
