Ayala’s Le Blanc de Blancs A/19 is a 2019 vintage cuvée made entirely from Chardonnay sourced from Grands and Premiers Crus in the Côte des Blancs and Montagne de Reims. The wine is finished as Extra‑Brut (about 5 g/L) and spent roughly six years aging on the lees, contributing to its fine mousse and creamy texture. Aromatic notes include pear, grapefruit and white flowers with honeyed touches; on the palate it is lively, chalky-mineral and finishes with pleasant bitter accents.
