Description

Ayala Perle 2015 comes exclusively from five Grand Crus: Chouilly, Cramant, Le Mesnil-sur-Oger, Oger and Aÿ. Chardonnay leads the blend, completed by Pinot Noir. Maturation takes place for more than eight years under cork, followed by riddling on traditional racks and manual disgorgement. The profile suggests toast, hazelnut and dried flowers, with a nuance of eucalyptus. On the palate, candied citrus intertwines with cocoa and dried fruit. A bitter component accompanies the long finish, maintaining a balance between freshness, complexity and generosity throughout the wine’s development.
