Description

Bajta Salež’s Malvasia Istriana comes from Sales, in the municipality of Sgonico on the Trieste Karst. The vines grow on limestone soil and red earth in a landscape exposed to the bora wind. Grapes are hand-picked, destemmed and pressed; the clear must ferments in stainless steel, where the wine remains until bottling the following spring. Its straw colour has greenish highlights and the aromatic profile is floral. The palate is dry, fresh and intense. The cuvée accompanies cured meats, first courses, white meats and grilled fish, retaining an approach rooted in the local grape.
