Description

Farfalla Cave Privée began as Ballabio’s private reserve, originally intended to follow the evolution of particularly important vintages of its Blanc de Noirs. Pinot Noir grapes come from two vineyards in Casteggio and Montecalvo Versiggia, in the Oltrepò Pavese. Hand harvesting is followed by gentle pressing of whole bunches and selection of the finest juice. The base wines ferment in stainless steel and wood, remaining on their lees until spring. Bottle fermentation and extended lees ageing complete a process conceived around the wine’s gradual maturation and development over time.
