Description

Farfalla Zero Dosage from the Noir Collection highlights Pinot Noir from Ballabio’s historic hillside vineyards in the Oltrepò Pavese, on predominantly limestone soils. Hand harvesting and gentle whole-bunch pressing allow careful selection of the juice for the base wines, which rest on their lees in stainless steel. The blend includes reserve wines from the same vineyards, in proportions that vary between collections. Following bottle fermentation and extended lees ageing, disgorgement takes place without added liqueur d’expédition, preserving the wine’s dry character and structure through to the finished Blanc de Noirs.
