Description

La Parcelle de Farfalla (Ballabio) is a vintage Metodo Classico sparkling wine made from Pinot Noir grapes from the Farfalla vineyard in Montesereno (Calvignano). Released as a pas-dosé (zero dosage), the wine is aged extensively on lees (about 80 months) before disgorgement. Gentle whole-cluster pressing and partial fermentation in small oak barrels are used to build the wine’s structure and finesse.
