Description

Bastian Wolber's 2023 red Bourgogne comes from Pinot Noir in the Mâconnais and Ladoix. The first origin is the village of Plottes, on limestone bedrock; the second comprises two clay-limestone parcels. The grapes are handled as whole bunches, with spontaneous fermentation and semi-carbonic maceration. Extraction is limited to gentle work on the cap and a few foot-treads near the end of fermentation. After vertical pressing, the wine matures in used barrels. The cuvée brings these different origins together through a shared cellar approach, without fining or filtration.
