Description

Bastian Wolber's Canopée comes from old Pinot Noir vines in Champs Pourris, east of Pommard beyond the D974 road. Clay-rich soil retains moisture and defines the setting of this small parcel. Whole bunches are fermented with indigenous yeasts and semi-carbonic maceration, keeping extraction to a few gentle operations. Vertical pressing precedes extended maturation in used barrels, followed by bottling without fining or filtration. The wine represents a distinct origin within Wolber's project, connected to a heritage of particularly old vines and the specific conditions of this clay-dominated site.
