Description

Bastian Wolber's Les Fas is an Aligoté from the heights of Pommard, at the edge of woodland. Planted in the 1960s, the vines occupy a north-facing site that ripens late. The grapes are chilled before crushing and basket pressing. After settling, the juice ferments with indigenous yeasts, and the wine undergoes extended maturation in used barrels of different sizes. Bottling without fining or filtration completes a patient cellar process built around this single Aligoté origin, retaining a clear connection with its cool, elevated vineyard setting.
