Description

Bastian Wolber's 2023 Savigny-lès-Beaune comes from Dessus Les Vermots, a site characterised by stony soil. For this harvest, the producer was able to purchase grapes from vines around one hundred and thirty years old within the parcel he had already used previously. The Pinot Noir is vinified as whole bunches, with indigenous yeasts and semi-carbonic maceration. Limited work on the cap keeps extraction gentle. Vertical pressing and maturation in used barrels complete the process before bottling without fining or filtration, highlighting an exceptionally old planting within this vineyard.
