Description

Bastian Wolber's 2023 Volnay comes from the Grands Poisots lieu-dit, on red, iron-rich soils. The Pinot Noir is vinified entirely as whole bunches, with spontaneous fermentation and semi-carbonic maceration. Extraction is limited to wetting the cap and a few foot-treads near the end of fermentation, before vertical pressing. The wine then rests in used barrels and is bottled without fining or filtration. This vintage centres the cuvée on Grands Poisots, providing a precisely identified origin within the mosaic of vineyard sites represented in the producer's range.
