Pas Operé is Bellavista’s selection combining Chardonnay and Pinot Nero in a restrained interpretation of Franciacorta. Work begins with the choice of historic vineyard parcels, predominantly facing southeast, and continues through the blending of individual base wines. The project favours finesse, energy and the capacity to develop, allowing cellar maturation to integrate the cuvée’s components. Fine, persistent bubbles accompany a structure that seeks a balance between breadth and freshness. It is conceived to express the precision of blending and the character of the estate through time, with each release contributing to that established approach.
