Description

Bérêche et Fils’ Coteaux Champenois Aÿ Blanc is a still white wine made from Chardonnay grown in the Grand Cru village of Aÿ. The grapes come from mature vines rooted in poor, shallow soils above a subsoil of pure chalk. Fermentation and maturation take place in used barrels, with extended time on the fine lees. This interpretation of Chardonnay sits alongside the family’s Champagnes, retaining a focus on the origin of the grapes. Brothers Raphaël and Vincent thus explore Aÿ through winemaking that does not include a second fermentation for effervescence.
