Description

Louis Billard's 2023 Bâtard-Montrachet is made from Chardonnay growing on limestone, stony marl and sandstone. The cuvée's technical information describes vines around sixty years old and a cellar approach beginning with whole-bunch pressing. Slow, cool fermentation takes place in small 113-litre barrels, where the wine remains for fifteen months before a further month in stainless steel. Sulfur additions are restrained, occurring after malolactic fermentation and at bottling. This is a small-scale interpretation of the Grand Cru, reflecting the young producer's stated ambition to make fine, delicate wines that respect the individuality of their sites.
